sweetcorn fritters

mix 1 x 420g tin of creamed sweetcorn with 2 cups of flour, 2 eggs, 2 teaspoons of sugar, 2 heaped teaspoons baking powder, salt and pepper to taste. add a little milk if too thick.

heat oil to medium heat in a pot, about 5cm deep. put a tablespoon amount of the mixture into the hot oil and fry a few at a time until golden brown.

great as a side dish or on their own with grated cheese and syrup.

makes about 15.
