sweet cinnamon butternut

peel and cut butternut into medium chunks and boil until nearly tender. drain. add a big blob of butter, salt, cinnamon and brown sugar. leave this to semi-fry over a low heat until caramelised, by which time the butternut will also be completely tender. stir it around every now and again. the butternut does break up a bit, but that’s perfectly acceptable.
