heat a non-stick pan to medium heat and melt a generous dollop of butter. scramble 3 eggs. pour the scrambled eggs into the frying pan, reduce heat and cook gently (as for an omelette) until set. using a knife, cut the set egg into fine strips. set aside.
cook one cup of rice with half a cup of mixed frozen vegetables according to instructions. once cooked, pour the rice into the frying pan with the egg strips, add about 1 tablespoon of soy sauce and stir through. voila.
