italian bread salad


heat oven to 200º celsius.

tear 1 ciabatta loaf into small chunks, place on a baking tray, drizzle with a touch of olive oil and bake for 5 minutes until golden.

place 6 quartered tomatoes, 4 cloves of garlic and a few sprigs of thyme on a baking tray, drizzle with olive oil and sprinkle with salt and freshly ground black pepper. bake for 10 minutes, then allow to cool slightly.

toss the croutons, tomatoes, 1 disk of sliced camembert cheese and a handful of fresh rocket leaves together and drizzle with olive oil and balsamic vinegar. allow to stand for 20 minutes before serving.
