baked penne with tomato & bacon sauce

preheat oven to 180º celsius.

cook 400g penne pasta according to instructions until al dente. drain and set aside.

heat a glug of olive oil in a pan. add 2 cloves of crushed garlic, and 5 chopped rashers of bacon and sauté for about 3 minutes. add 125g of halved cherry tomatoes for cook for a further 2 minutes. add 2 x 410g tins of chopped peeled tomatoes for cook for another 4 minutes.

remove from heat and stir through 1 tablespoon of freshly chopped basil.

stir through the cooked pasta and spoon into a buttered ovenproof dish. sprinkle with ½ cup of breadcrumbs, ½ cup of grated cheddar cheese and ½ teaspoon of chilli flakes.

drizzle with olive oil and bake for about 15 minutes until golden and crispy.
